Carrageenan is a polysaccharide obtained from red seaweed, in particular from the species called Irish moss. By structure it is similar to jelly.

As a stabilizer, thickener and emulsifier, the carrageenan can be found in many foods – in meat products, sauces, dressings, soups, ready-made desserts (cakes, puddings, chocolates, jelly products), jams, beer, mustard. It is found in the soy milk, cream, yoghurt, cheese, margarine, mayonnaise, ice cream etc..

After many years of dealing with this issue and 18 published studies on the harmful effects of the carrageenan, the University of Illinois School of Medicine in Chicago, confirmed the association of carrageenan with numerous health problems:

“Researches have shown that exposure to carrageenan causes inflammation. Consumption of processed foods containing this additive is almost every day, and in amounts sufficient to cause inflammation in the body. Chronic inflammation eventually leads to many diseases, including heart diseases, Alzheimer’s and Parkinson’s disease, inflammation of the intestines, rheumatoid arthritis, arteriosclerosis and cancer.

As an evidence of this conclusion is the fact that it was used in the pharmaceutical industry for causing inflammation in the tissues. According to these claims, carrageenan has a particularly destructive effect on the digestive system.

There are doubts that it can also be responsible for the onset of diabetes, ulcerative colitis, and even carcinomas of the gastrointestinal tract, especially the colon.

Based on these facts, many scientists are putting pressure on the FDA (US Agency fo Food and Drug Administration), seeking a ban on the use of carrageenan in food industry.

However, the FDA rejected all appeals and petitions, and argues of its harmful effects and refuses to legally prohibit its use in the food industry.
